Empire Style Ghee Rice

Serves 2

Ingredients
  • Jeera rice 1/2Kg or Basmati
  • Onions - long sliced
  • Ghee
  • Cinnamon - 2
  • Cloves - 6
  • Cardamom - 3
  • Star Anise -3
  • Bay Leaves - 4
  • Green Chillies - 4
  • Ginger - small chopped
  • Salt
  • Coriander leaves, fried onions, fried cashews - for Garnish

Preparation

  1. Wash the rice and soak in water for 30 minutes.
  2. In a cooker, add ghee, all spices, onions and fry till golden brown.
  3. Add chopped ginger and fry.
  4. Add soaked rice, mix well and fry in high flame.
  5. Optionally you can add small chopped carrot for color.
  6. Add salt and water. Water to be added in the ratio of 1.25 cup water for 1 cup rice.
  7. Close the lid and cook for 2 whistles or if using open pot cook till rice is soft.
  8. Once cooked, garnish with fried onions ,coriander leaves and fried cashew and serve.
