Ingredients
- Paani
- Pudina leaves
- Coriander leaves
- Green Chillies
- Ginger
- Jaggery - as per taste
- Tamarind - as per taste
- Cumin
- Salt - as per taste
- Stuffing
- Green peas - boiled
- Potato - boiled
- Onions - finely chopped
- Tomatoes- finely chopped -optional
- Green chilies - long sliced
- Puri
- 1 cup semolina- (chiroti rava)
- 1 1/2 tsp wheat flour/maida
- Salt -pinch
- Soda water or water
Preparation

To Prepare Paani, add all the ingredients in a jar and grind to a smooth paste.
- In a vessel seperate the pulp from above paste and water and adjust the taste. throw away the pulp.
- Add salt and jaggery if needed.Add some lemon juice, chat masala and garam masala to it.
- To Prepare the stuffing, Soak the green peas in water for few hours and pressure cook them.
- Boil the potatoes and mash them in a bowl.
- Add chilli powder, salt, chat masala, coriander powder, garam masala and mix well.
- Keep finely chopped onions and tomatoes along with stuffing.
- To prepare puris, Use drinking soda or water to mix the above ingredients and make a dough.
- Let it sit for 10 minutes with a wet cloth covering on top.
- Roll the dough and use a small cup to cut the puris.
- Deep fry the puris in oil by pressing lightly while frying.
Serve Panipuris on a plate.
